There isn’t a week that goes by without eating avocado, whether it is smothered over toast or simply served with freshly-toasted tortillas.
A healthy snack or a quick lunch or breakfast. No fuss, a really ripe avocado, rock salt and a pinch of chipotle flakes… ta-da!
- One ripe avocado
- 1/2 tsp of rock salt
- Pinch of chipotle chilli flakes (a bit more if you want it spicier)
- Sourdough or wholemeal bread
- Pumpkin, sunflower seeds or cherry tomatoes and fresh coriander for topping
Scoop out the avocado and place flesh in a pestle and mortar. Sprinkle with the salt and chipotle chilli flakes. Gently mash the avocado flesh until creamy and smooth. Toast some sourdough or crusty wholemeal bread. Spread the avo generously on the bread. I love it simple but you can mix it up with a topping. Sprinkle a mix of pumpkin and sunflower seeds or scatter with chopped cherry tomatoes and fresh coriander.
